Jicama, Cucumber, Orange Salad

Here's a delicious salad that requires no cooking and is quick to whip up. Best of all, you can make a double/triple batch and it keeps well in the fridge for lunches. I've combined the crunchy and slightly sweet jicama with cool cucumbers and sweet orange to delight the palate and fuel the body.

Jicama is high in vitamin C which is an important antioxidant as it neutralizes free radicals, squelching inflammation and fighting of viruses.  Jicama is a great source of ogliofructose a soluable dietary fiber. This type of fiber is what we call a prebiotic, meaning it gives food to your benefical bacteria so they can flourish and grow keeping your gut happy. A happy gut is a happy brain and body! 

Next up we have cucumber which is a known super star. Cucumber is high in potassium making it an excellent addition to a heart healthy diet. Cucumber also contains several unique antioxidants that combined are powerful anti aging and slow down several disease processes. They are also high in Vitamin K which has a very important role in bone and heart health. 

I've added some slices of orange for sweetness and to balance out the dish with some natural sugars.  I've also included sea lettuce for added boost of minerals, lime juice for some kick and antioxidants, and a drizzle of olive oil.

Jicama, Cucumber, Orange Salad

1 small jicama peeled and chopped (grapefruit sized)

1 large orange, sections cut in half

1.5 large cucumber, chopped

1 tsp sea lettuce

2 tbsp olive oil

1 lime juiced

Mix together and serve!
